Pineapple curry

Tasty, nutritious, refreshing

Kitchen equipment:

prepare a frying pan or wok


  • 200g of tofu or chicken breasts
  • 2 spring onions
  • vegetable oil
  • 500 ml coconut milk
  • 1 tbsp of yellow curry paste 
  • 2 carrots, 2 parsleys
  • 1 whole leek
  • ½ broccoli
  • 100g of mushrooms
  • 1 tbsp of fish sauce
  • few drops of Worchester sauce (not necessary if you don’t have it)
  • 1 tbsp of soy sauce
  • ginger and turmeric finely grated ginger and turmeric (be aware of their strong taste)
  • 1 small zucchini
  • coriander herbs
  • pineapple slices
  • sesame seeds
  • rice of your choice or rice noodles
  • (extra tips: frozen soy, red or green peppers, wakame seaweed, shiso leaves,  or whatever you like. No limits to your imagination.)

We highly recommend our yellow African pineapple from Rwanda for this recipe.



  1. Firstly cut and wash the vegetable. Cut the carrots and parsley into thin strips. We wash the broccoli and divide it into small sprouts.
  2. Chop the onion and meat (or tofu) into small pieces.
  3. Cut the mushrooms into quarters.
  4. Put the oil into the frying pan to cover the bottom of the pan, add the chopped onion and meat (tofu) and fry 3-4 minutes.
  5. Add thinly sliced carrots, parsley, broccoli and sauté for 2 more minutes.
  6. Add coconut milk and wait until it starts boiling, add a tablespoon of curry paste, stir well.
  7. Add other ingredients, mushrooms, fish sauce, Worchester and soy sauce, turmeric, and ginger. Set aside, do not boil.

Preparation of the side dish:

  1. For serving, finely chop: leek, zucchini, coriander herbs, pineapple slices pineapple slices which we will place raw on the top curry dish, sprinkle with sesame seeds mix.
  2. Put the cooked rice into a bowl , or plate. If you have a smaller bowl, you can press it into it and make an island in the middle of the plate around which you will put the curry.
